Shanghai, 2nd July – Naturex received an award in the category “Food & Beverage Ingredient” for Talin®, an extract from Thaumatococcus Daniellii during the Ringier Technology Innovation Awards ceremony held in Shanghai last week.

Taking place during the Food ingredients Asia-China trade show 2012 in Shanghai, this award celebrates innovation from companies that have significantly contributed to the advancement of China’s food and beverage industry. Innovation winners are selected by a panel of independent judges based on serious reviews, evaluation and the voting results of the public.

Guirec Rollando, East Asia Sales Director commented “We are very pleased to receive this Ringier Technology Innovation prize for Product and Technology Innovation. 2012 is a special year for Talin® in China.” Indeed, in early June this multifunctional food additive was formally adopted by the Chinese food regulation authorities. “This regulatory update and this influential industry award will broaden opportunities in the buoyant Chinese market” he added.

Natural Sweetener Solutions

It seems that every day there is more news in the press about Stevia and Reb A, with increasing speculation when it will be approved in Europe and discussion on the best way to create a balanced sweet profile, with a short sweet aftertaste.

Recent work by the R&D team at Overseal into the different sweetener blends is very encouraging. Our preliminary research has seen good reductions in lingering bitter aftertastes. Overall sweetness is more sucrose like and the total sweetness increased. We have seen the results with a number of different sweeteners blends including the traditional Aspartame/Ace K blends as well as natural sweetners such as Stevia and Reb A.

The key is balance and optimising the level in formulations. Talin® Thaumatin is only needed at very low levels typically 0.5ppm-5ppm.

Research conducted for Overseal Natural Ingredients by Flavometrix based at Nottingham University using their unique taste-aroma delivery system (Dynataste) has demonstrated the effect of Talin® on aroma perception. The sensory panel showed a 40% increase in the strawberry intensity compared to without Talin®.

Talin® (Thaumatin) - naturally masking bitterness

Talin® (Thaumatin) will also mask bitterness and overcome the perception of the off notes making it of particular interest for functional foods, nutraceuticals products, supplements and pharmaceutical applications.

Functional and “healthy for you” foods continue to increase with salt and sugar reduction and fortified products growing in popularity. Many of these ingredients have off tastes or bitterness associated with them which Talin® can help to mask.

Our sensory research demonstrates the effect that Talin® can have on bitter substances such peptides, quinine and caffeine.  Decreases in the perceived bitterness of the products of up to 45% were achieved.  Talin® helps to make the flavour more palatable and according to the level added can mask varying degrees of the active substances whilst simultaneously enhancing flavour perception.

Talin® also has remarkable results when it comes to perceived mouth feel – even at very low dosage levels.  For instance low fat dairy products have a much fuller creamier mouth feel even when Talin is added at just 2mg/kg.  Again these results are all backed up with sensory analysis.  The technical team at Overseal works closely with their customers to optimize the level of inclusion in a product – with dosing in the parts per million levels it is very easy to add too much!

Talin® is a truly versatile ingredient and is used in both sweet and savoury applications as a sweetener and flavour modifier. Applications have included savoury products, where thaumatin is used to improve the “umami” effect, improving flavour perception, and also drinks, desserts, nutraceuticals and pharmaceuticals.

Where can Thaumatin be used?

Talin® is listed in the Codex General Standard for Food Additives and permitted for general use in food according to GMP.

In Europe it is approved as a sweetener (Sweetener directive 94/35/EC) or as a Flavour Enhancer (Miscellaneous Food Additives Other than Colours and Sweeteners directive 95/2/EC) in a number of different categories.

In the US is has GRAS approval (FEMA GRAS Number 3732 and a Drug Master File 16260.

Talin® has gained approval in more than 30 countries around the world.

Talin® is available in a number of concentrations on various carriers suiting a wide variety of applications. In addition an oil soluble form has also been developed for application in essential oils and other fat applications.
